Fire creates a special atmosphere of coziness and comfort, this is one of the advantages why wood-burning pizza ovens are in demand. The next advantage will be the work of pizzaiola in sight. And of course, the appearance of the stove will give the interior a special touch. Well, pizza from a wood-burning oven is “perfetto”! In such an oven you can cook not only pizza, but also traditional Italian lasagna, calzone, canelloni and bread, as we already wrote about this in this article.

Superiority in the production of pizza ovens is held by Italian manufacturers. But stoves are also produced in America and Bulgaria. Each manufacturer may have various forms and variations of the furnaces. They make stoves only on wood, combined: wood and gas, gas stoves, static or with a rotating hearth (rotary).

Only some manufacturers have electric modifications to the furnaces (from domed variations in the manufacture of furnaces). When purchasing such furnaces, it is very important to pay attention to their dimensions and weight! Mostly furnaces are delivered ready-made and only a few models are possible disassembled! Before buying, you need to make sure that the furnace moves smoothly into the room you have chosen for it. Measure the width of the doorway, the number of storeys of the building, the permissible load of the floor tiles (if installed above the 1st floor). And of course, follow the instructions for installing the chimney. – Pay attention to the installation location, the stove should be installed in a well-ventilated room, but not in the low pressure zone (which can be caused by any smoke traps or air conditioners), or where there is a forced air stream.

Let us consider the differences between MAM and other offered furnaces on the market: The thickness of the furnace walls for some furnaces is 15-17 cm, and for MAM 20-22.5 cm. For Traditional MAM, it has a thickness of 10 cm (even for lightweight EASY 7 cm). Some manufacturers make under fireclay stone, which holds less temperature than vibrated concrete MAM. Therefore, they declare the consumption of firewood 7 kg / hour! In MAM, the consumption becomes about 2-2.5 kg / hour. A lot of wood – a lot of smoke and soot, the oven needs to be cleaned 3 times more often, otherwise the pizza will be in soot. If the walls of the furnace are thin, then they will be hot and outside, heating the air in the room strongly. At the MAM furnace, during operation, the walls usually heat up to about 40 degrees no more.
