Restaurateur Sergey Melnik. Interview at Klumba
Odessans managed to fall in love with Klumba for its delicious cuisine, cozy interior and special atmosphere … For your attention, an interview with the creator of this beautiful restaurant – Sergey Melnik. The interview is conducted by our project manager, Irina Senchuk.
To start, a little standard question: How did you end up in restaurant life. How did it all start? Is this your dream?
– Initially, I am an entrepreneur. At the beginning I traded.
The first restaurant was in 1997 on Levitan / Koroleva- the Triumph summer platform of the Triumph store. It all started with her. And then there was the “Flowerbed”. “Flowerbed” in Gorky Park since 1993. Before me it was a currency bar, one of the first in Odessa. I bought it in 2003. December 2, I went here. He took it on account of the debt by lease. In the beginning, he recruited children from 26 schools, thought that he had hired professionals, and after six months he dismissed everyone. And a family cafe appeared: mom cooks, dad fries, godfather sells at the bar, my wife is in the administrators, and I am the manager. I liked it – I began to develop.
How did the idea of creating a family cafe come about?
My child is a family cafe, a playground since the time when my child was 3 years old. I prefer the theme of home, family atmosphere.
I know that you made the reconstruction – completely updated the kitchen and halls. Did you close the restaurant?
– No, not a single day the restaurant was closed. We huddled in small rooms, it was difficult for us, but visitors did not even notice that we had a global repair. We did each room in turn, but after that we went into the kitchen and destroyed it. We made a complete redevelopment of the kitchen, divided it into zones, replaced the equipment with new ones, giving preference to better manufacturers (Convotherm, CustomСool, Tri-Star and others). Looking back, I can now say with accuracy that it’s not difficult: if you know how, why and why . And this is a certain difficulty: to create such an atmosphere and organize everything so that visitors do not notice. From the very beginning, as I am here, we are constantly expanding, building and improving. Coming to the hall, our regular customers did not even notice this, although everything happened before their eyes. Outwardly, it was imperceptible.
In your opinion, what are the three main pillars in the restaurant business so that a person can feel good in your restaurant?
– Comfort, service and delicious cuisine. We pay great attention to good cuisine, because as a rule, people go not to me, not to my name. People go to the waiter, administrator, delicious cuisine, and after that, to some interior part. All I can give people is the interior, and the rest is a team. In addition to the restaurant, I have many more activities. I have a management style in which there are managing people. Once every few days I come, do an audit, and they do the rest.
Tell us more about another type of your activity.
When the “Flowerbed” was opened in Shevchenko Park, we bought rattan furniture made in China. And the furniture lasted 3 months. After 3 months we put it in a warehouse, and the next year it was necessary to put it on a summer terrace, and the furniture was unusable. Repair of this furniture has grown into the fact that a huge niche in this segment is open. And I created the company Terico. People want colors, and China can only give us one look, without choosing a color, and if with a choice, then wait 3-4 months, and we gave this opportunity – here and now. Terico consists of 8 workshops: welding, painting, sewing workshops, sales department, locksmith workshops, etc. .. These are many more types of different activities in one enterprise. We also restore rattan furniture. Our customers are Maristella, Ibiza Club, Odessa Nemo Dolphinarium and not only Odessa. The business is seasonal, highly specialized. If everyone used to want cheaper, now they want it faster, because the season.
